That's probably in the 'Previous Recipients' list, reachable via the
Window menu in Mail, it will let you delete inaccurate entries. The
other place it can come from is your address book, so make sure the
recipient's address is correct there (or you don't have duplicate
address book entries for people)
You can go to Previous Recipients to browse and delete multiple
entries, but you can also right-click an address in a message window's
header section (reading or composing) and Remove from Previous
Recipients List. That's a bit easier in your case since by definition
the unwanted address is right there.
