1 gig of ram on an 800 MHz G4 was usable but not the greatest. However, it will be a huge improvement over 256 megs, you will not regret upgraded. However, I was spoiled by a Dual 2 GHz G5 with 6 gigs of ram at the same time, which a single G5 is better than any G4.
I installed Leopard on an 800 MHz eMac with 1 gig of ram so that's how I know.
