Hold the alt key when booting up and the Mac will prompt the user to select the volume to boot from. This has been around for ages, since 90s. When it comes to macs that are 68K based, there were ways to boot from another partition but I don't have that information at the top of my head because that was a while ago but it's documented if you are curious.
