When the service stops sending mail what does your SMTP
log show?  Does it show any attempts at all?  Are there any
processing files in the queue that appear to be old?

I have in the past seen messages sitting in the queue that were
actually due to the DNS cache needing to be reloaded.  Do
you handle your own DNS?
