Yeah so if it does go to someone who isn't in the domain it should copy it
to the nobody alias, I have all mailed copied to a name too. So all mail
would be processed now to my understanding is that correct?

No, only mis-addressed mail (no user, alias or list of that name) for that
domain, is processed by nobody.

No, relayed mail would not get put into the nobody 'destination' account,
unless the email addresse(s) resolves to a non-existant address in the
domain.
