James, look in Control Panel | Imail | SMTP Security.  Put the fill
address of a 'dummy' user where you want all mail copied to.  Additionally
you will probably want to create rules in your 'dummy' users box that
send all mail to the host domain users to one folder and all mail from
the host domain users to another folder.  Easier to sort like that.
