As much as I was and still am against it for our Exchange environment,
there is a product called Double Take that may very well work for this.
It basically duplicates the server on a backup, including host name and
IP.  In the event the primary server fails, the Double Take server will
assume the role of the primary and nothing at all will change.

Can someone explain the concept of a backup email server. I guess my
question is, what happens if one fails or high workloads? What can be
done to the mail boxes to be redundant. Would it require a email
gateway? What needs to be done to the DNS? What happens to clients POP
settings? This project is way over my head.
