The CPU on our mail server is max'd out at 100%.  The main process that is
using cycles is two instances of Clamscan.exe.  When I try to end the
process, I get a access denied message. How can I recover from this or do I
need to reboot the machine?

For killing processes, the best tool is psKill.exe from sysinternals.com. It's free and works much better than the windows kill.exe and taskmgr.exe.
