For this VM has made the VM ESX server. Put in x number of boxes. Run one or
more VM sessions on a box. If you want to take the box down move the
sessions while active to a new hardware server. Works only when you have a
shared storage device attached to the servers. Sounds to me like this is
what you want.
Do what hotmail does. Store a mailbox on a given server/storage unit and
make sure that unit is allways available. They use a different architecture
but the end result is the same.

Use a blade server to give you the cpu cycles and a SAN for the storage if
you need lot's of cpu and disk, use a few separte servers and a shared
disksystem if you need less.
