You can use domlist, a free tool available on Declude's site, to generate reports of incoming/outgoing mail volume and bandwidth usage per domain. There are other pay-for reporting tools out there that will do that as well.
For disk space, we simply run a script over the domain list to record disk space into a database on a nightly basis. You could do something like that as a nightly measurement that is summarized on a monthly basis. However, since we set limits on mailbox size, it's only used for reference. Mail volume is the real issue.
