I usually change a their passwords and redirect website to a "Contact
Us" page.
This way they don't lose email, but cannot send or get email.
Works in 99.9% of the time.

You can make a copy of their DNS zone file and then delete the MX and
associated A records.
If they pay up, you can copy the old zone file back in or re-enter the
records.
May not stop them from sending out (if they’re using an IP Number or
your domain name as the mail server in their mail client) but they
usually call when they stop getting mail.

*Subject:* [IMail Forum] Easy way to disable domain?
Hi Everyone –
We have a client who has fallen a few months behind on hosting, and
calls to them go unreturned. Yet they are continually using the
service. So I’m going to disable his email (and website) hosting at
the end of the day.
Is there an easy way to shut off his domain from IMail, rather than go
through each account to disable it?
Thanks for your thoughts!
Todd
