That "Received:" line is the one generated by the mail machine that is
connecting to yours. The "undah.com" comes from the IMail configuration
(the other machine gets it during the SMTP session, when the IMail server
says "HELO undah.com"). The "mail.brokenstorefront.com" is what the other
machine thinks your machine name really is, based on a reverse DNS lookup.
So, you would need to change the DNS records in order to change what shows
up there.
