Best way imo, one function/box.

So incoming SMTP arrives port 25 of the a-v box, get cleaned, and gets 
forwarded to Exchange machines's port 25, and also the Imail machine's port 25.

That articles is how to have symantec on listeing on port 25, and 
forwarding to Imail on port not-25, where both are on the same machine.

With 3 separate boxes, I fail to see where you're having a pb in using the 
standard port 25 on all three machines.
