Andy,

It should not be necessary to stop the services. Backup software can usually
be set to ignore open files, or retry after some time (better choice!).
Mailboxes maybe open when new mail is arriving and when users are logged in
(usually only when checking for new messages) so the retry time can be just
a few minutes.

Do not forget to backup the registry!
