It seems to me there are three problems:
* spam from us - we (a school) don't have the population size or type
(anonymous users creating their own accounts, for example) to worry about
this much
* spam relaying through us - as you say, relay and AUTH settings take care
of (most of?) this
* spam to us - a) not much in evidence yet, b) filtering can deal with
(some of) it - reactively, proactively, whatever one's taste is, c) RBL has
a bit of a reputation for over-doing it.
