Here's my 2 cents :)

I use the PDC/BDC format using the NT database for my users on my main
domain, which makes up about 80% of my active mail accounts.  I have 3
drives on each, 1 main, 1 mirror, and 1 for the /spool directory.  I've
added the domain on the BDC and it simply syncs to the PDC (as it should
anyway) adding any new accounts as a backup.  DNS is of course setup with a
secondary MX record pointing to the BDC, so delivery fail over is there.
Now, if the PDC dies completely it's as simple as changing a DNS entry for
the mail clients.  Of course, all of this (changing DNS entries
automatically) can be scripted if needed, but I haven't had any major
problems, so the need hasn't been there (knock on wood).  The only problem
I've had with this is that mail gets delivered on the backup, if users don't
POP their mail, it sits there once the primary is backup - that I can live
with for now.  Other domains require adding entries on both machines, but
admins get no sleep anyway so it gives me something to do at night;)

Ok! So what are the options. How can I mirror the entire mail server to
annother machine? Should I just mirror the folders onto annother drive? Is
there even a program out there that can produce a copy of the mail server on
a continual bases?
