You seem to be confusing hacking with spamming.
The difference is that there are good and bad hackers, whereas there are only bad
spammers.
Seriously, though, hackers will rarely pose a threat. They would "get you" by
changing your DNS, sending oversized packets, and things of that nature. The hackers
that target your system are likely trying a DOS (denial of service attach). There's
not a lot you can do to prevent that besides standard security precautions (have a
firewall, keep up to date with security issues and such).
Spammers, on the other hand, want to "hijack" your mail server and use it without your
permission to mail 100,000's of E-mails. They rarely resort to any hacking
techniques, they just take advantage of the fact that SMTP servers were designed to be
open. If you allow them on, they come on. If you make them jump through hoops to use
your server, they'll do it. In order to stop them, you have to lock your system down
100%.
To do that, you need to use the "relay mail for addresses" setting (which means "allow
people from these IP addresses to send mail through the server"), and make sure that
you allow SMTP auth (don't disable it), so that people from outside IPs can get on
(using authentication, they just have to check "use authentication" in their mail
client). That way, a spammer can only use your mail server if he is coming from your
IP address (make sure your router blocks incoming traffic claiming to be from your IP
address, as Len mentions) or has a valid username/password.
