You could set up a separate MX entry with the new IP address, and make it
with a larger entry, i.e.:
yourdomain.com. 86400 IN MX 10 existingmail.yourdomain.com.
yourdomain.com. 86400 IN MX 20 newmail.yourdomain.com.
Then when you do the switch, the "existingmail.yourdomain.com" machine
simply goes offline, and all mail will then begin to flow to your
"newmail.yourdomain.com" server, at which time you can make your DNS change
to reflect your new server setup. This way it doesn't matter how long it
takes for the change to migrate through the various DNS servers.
