Ouch.
I don't think there's going to be an easy way to do this. We wrote a
program a while back that would scan all the users' directories for a
keyword (such as a file attachment name), and it would report all the users
that had that string in their mailbox. But, that wouldn't do much good if
everyone got a copy of the virus. In order to go the next step (deleting
the message), you would have to do a lot of extra work, and would need to
know the format of the mailbox file (which I believe is the standard Unix
mailbox format, but could be slightly different).
Your best bet (depending on how many users you have) may be to use the
IMail Client. I believe it will let you log on as any user, and delete E-mail.
