Ipswitch offers the Perl code they're using for that for free at their
website. It's a challenge to get running if you're unfamiliar with Perl.
Nothing with that functionality is built-in to IMail.

You can check the "strip non-text attachments" option in the List manager of
the IMail Admin console.
