Are you talking about sending an E-mail back to them, or sending an E-mail back to
them AND delivering the original E-mail?
If you don't want the incoming E-mail delivered, you could probably set up a "nobody"
alias (which will accept all incoming E-mail for the domain, if you delete all the
users), and have an auto-response/vacation message for it.
I think the only way to do this if you want the mail delivered would be to set up such
a message for all accounts (you could likely do this by copying the appropriate file
into every users' directory).
