Matthew,
I cannot help with the Exchange configuration, but what you describe should
be possible. As you describe the situation, I would think the IMail machine
would have a completely different FQDN and that would allow IMail to receive
(with the correct MX and A records) the mail for your lists. The lists each
have a file with a list of email addresses, that would send the mail to your
users (either on the IMail machine or off, it makes little difference to
IMail!). This setup would not need any 'forwarding' as you describe it.
