>anyway to set up a catch-all account for all failed e-mails on a domain?

Create a nobody account, it will catch-all mail for unknown users on
a known domain.

If you get attacked by a harvester sending you a dictionary of names,
they will all go to nobody account rather than be rejected.

If a relay black list tests your nobody domain, the relay test might
be fooled into thinking your acceptance of their test mail means your
are an open relay.
