You can't.  DNS/SMTP doesn't have any way of letting you know to connect to 
another mail server after you have successfully connected to the primary one.

What you can do is as you switch users, you can set up forwarding on the 
primary mail server to forward to the backup mail server (for example, 
[EMAIL PROTECTED] could have his E-mail forwarded to [EMAIL PROTECTED]).
