A port redirect at your firewall or router.
I've also been playing with stunnel to implement SSL/TLS on top of iMail,
since they didn't see fit to include it in 7.0. Getting around a port 25
block isn't the purpose, but it would accomplish the same thing if clients are
using a capable mail client.
