Sounds like you have them using the same directory.  You should have a separate directory for each domain.  i.e.: g:\imail\dog_com\users and g:\imail\cats_com\users
 
If you are using the same directory, that is exactly what will happen.  Open IMail Administrator to change the directories, however, you may want to look in the knowledge base to see any other things you must do.  Not sure if it is as easy as changing the directory after it is already set-up.
