That's exactly what I did, ran the setup, watched the indicator, clicked a few buttons, rebooted, and then had imail 6 running.  Very painless.  You might run in to an error message on boot stating that a service failed to start up, this is usually the web calendaring service (if you enabled it), just disable it.
 
Also the Tech I talked to said that he has had over a hundred people do this, and none have ever called back with problems related to the downgrade.
