I had the same problem with a few of my clients. No, you can't "store and 
forward" to a client without a static IP. Here's how i got around it.
Create a single account for the client and create a "nobody" alias that 
points to that account.
Install some sort of POP forwarding software, I used EFS from 
www.chimera.co.nz because it's free and it works well. Point the pop 
forwarder to the account you created, it will download all the mail from 
the imail server and without changing the To: header will forward it to the 
exchange server using smtp.

The trouble with this is that EFS has no built-in dialer, I set exchange to 
dial out to send mail every 30 minutes with a 15 minute timeout, whether or 
not there was actually any outgoing mail. I then set EFS to check for mail 
every 15 minutes, you get a lot of error messages in the EFS log file if 
Exchange isn't dialed in when EFS checks for mail, i told the client to 
ignore EFS errors unless they don't receive mail for a few hours. (they 
generally have new mail every time it checks) you can use some sort of DUN 
scheduler if you want. I didn't want to add another software package into 
an already ugly solution.

It's ugly, but it works.
