The primary consideration is don't delete the current log :-) Although I'm fairly sure IMail would just recreate it I never actually tested this. What I did is create a directory (I named it 'OldLogs') and created sub-directories within that, one per month. I enabled compression (text log files compress nicely) on that structure to minimize the space used. Every week or two I move log files into the appropriate months directory.
