So the entries themselves are normal.  But the fact that there's nothing
in between them means something went wrong.  Any  ideas?  Did the smtp
service just stop responding?

the master daemon, SMTPD, wakes up every x minutes (30 in your case) and

spawns an SMTP process to check the mail queue for deferred msgs to be 
re-attempted.
