Do you see "malicious code" in WEB log?  Is your iMail in a proxied DMZ?
If so, make sure your WEB Messaging users are using the LOGOUT link.  Web
Messaging was hanging/slowing iMail every three days for us.  I then made
sure users used LOGOUT and I haven't had to restart iMail since (7 days).
