OK -- in that case, it seems that SBS2000 is poorly designed, in that it
passes on the host name of the remote server, but not the IP
address. Unless they have a fix for it (adding a Received: header with the
correct information), you'll have to accept it, with the drawback being
that it will be hard (or impossible, depending on the SBS2000 logs) to
track the source of E-mails.

There is no resolving necessary, and you don't need to change the ports.
The problem is that SBS2000 passes the connection on to IMail, but since
they are running on the same server, IMail sees the address as 127.0.0.1
(localhost). That isn't unusual -- most SMTP-based virus scanners work
that way. But, the problem is that SBS2000 doesn't add a Received: header
with the remote mailserver's IP (which those SMTP-based virus scanners will
do).
So to answer your original questions:

It is impossible to say without reviewing the SBS2000 logs. If it were
adding a Received: header, you could simply look at the second Received:
header.

You would really need to block them with SBS2000, since it is hiding the IP
from IMail. Another option would be to block their return address, using
IMail's SMTP "Kill File" security setting.
