Still should only be one default gateway defined on a server no matter how many NICs or IP addresses, it has, and it should only be applied to the NIC that is in the same logical subnet as the gateway. All of the other interfaces should have a blank default gateway field.
This is no different than how a router is configured--no mater how many interfaces a router has, whether WAN or LAN, it still only has one gateway address defined. Adding multiple gateways to a server or router only causes routing problems. If necessary, individual route statements can added to point specific networks to other servers or routers, but again, only one gateway address should ever be defined per system.
