Right, I agree! I realized what had happened.  We had made an entry to the
hosts file before when we had trouble with them so our server was using the
"old" address from the hosts file and not checking their DNS.   I took the
entry out so then the mail server found the correct info and the message was
delivered!

Note that that is a problem on their end.  If their MX record points to the 
wrong IP (even during "DNS propagation"), it's a problem on their end.

You can put an entry into your HOSTS file, but note that that is a last 
resort -- the next time they change IPs, you're going to wonder why IMail 
is still using the old IP.  :)
