Is there a kb article on setting the IMail up to do this?

Yes, that is possible, and we have some customers who are doing just 
that.  That works well in a situation where you have a volume of mail
that 
takes a lot of time to scan (virus scanning can use a lot of CPU time, 
although there are tricks to reducing the CPU usage), but you want to
make 
sure that the SMTP/POP3 service is as fast as possible for your
customers.
