Is this "Server talk"
or something I ought to be worried about? Being new to this, I've never seen
it before, and if it's a problem, I want to kill it....

This one indicates that your server is running low on energy, and you should add another power supply.

Whoops, wrong answer. Sorry. The "SMTP" lines that do not begin with a ">" are lines that the remote mailserver is sending to you. All that matters is the response code (354 in this case); anything after that is just meant for humans to read. It's someone's cute way of saying "Ready to accept the E-mail". Looking at log files, you find there are occasionally some pretty cute responses from remote mailservers.

Again, just cutesy messages from the remote mailserver. :)
