Is your spool directory a child directory of the IMail root directory? Sounds like it isn't. I have seen cases where if you set the spool directory to a different location the SMTPD and SMTP logs get written to a different logs. One in the new spool location and one in the spool directory under the IMail root location. This was an older issue.
