I'm considering switching over to this SMTP relay option and I wanted to know what I should watch out for? Basically, is it easy to spoof, hack, etc.?
It's nearly impossible to spoof/hack, just so long as you only list appropriate IP ranges. The only real security issue is if you open IP ranges that spammers could be on (such as all IPs of a major ISP). Although technically possible in some cases to spoof IPs on an IMail server, in most cases it would be extremely difficult, and not of a benefit to the spammer.
"Relay for Addresses" and "No Mail Relay" are the two choices that will almost always prevent spammers from relaying mail through your server (the exceptions being if they are on an allowed IP, or if they have the password to a valid account on the server).
