As  Scott  said,  changing the listening port on IMail will change the
binding port for outgoing mail, so this wouldn't work, anyway.

Sorry  to  break  it  to  you,  but  you have to use something else in
conjunction  with  IMail.  One  suggestion would be running MS SMTP on
another  box,  hard-coding  that  box  as  the  MX  for  the domain in
question,  then  setting up MS SMTP--which has this as a configuration
option--to send to port 26.
