Once you change the hostname, why not set up the old domain as an alias? That way, it will still receive for the old domain, at least until you want it to.
As far as DNS, as long as it is pointing to the same IP, that should not be much of a problem, as long as you add the new domain configuration to DNS, wait 48 hours, then change the old if you want.
