When I bring on board a second windows 2000 box as a domain controller, will
I have to move my Imail installation to that server or can I instruct Imail
to perform NT authorization on the Active directory on a different machine?

(For what it is worth, we are a very spread out low volume installation.)

The only problems you'll have will be related to resource competition,
and  whether that will create an unworkable environment--either for AD
access,  IMail  access,  or  both--depends  on  the  particular  usage
patterns at your site.

If  usage  is  sufficiently  low, no one will notice a difference, and
only you will know that you have a (temporary) single point of failure
for two mission-critical services. If usage is high enough to create a
non-negligible,  yet  non-fatal,  impact on your services, you can get
away  with  that  for  a  little  while  (depending  on your manager's
attitude!)  until  the  other DC is in prod (at which point you should
direct your clients to use the other DC as much as possible).

As  you  can  see, it's impossible to read your environment from here,
but this could go either way.
