Right, but here's my problem:

"First, if you haven't already done this, bind the IP address to the
machine in Control Panel | Network | Protocols | TCP/IP | Properties |
Advanced.

Then run regedit. Go to:
HKEY_LOCAL_MACHINE\Software\Ipswitch\IMail\Domains
You should see a key with the IP address you will using. Open that IP
address key and create a new String Value named Official. Set it to the
Official Hostname of the domain you are converting"

I bound the IP addresses then went to regedit as instructed.  It then
says "You should see a key with the IP address you will be using."  I
don't.  That is the problem.  I haven't done anything beyond observe
that those IP addresses show up in Imail Administrator.  Sorry if I
didn't communicate that well earlier.

I am about to upgrade to 8.04 per Ipswitch support advice in response to
an email I sent last Friday.  I'll see if maybe I don't see the keys for
those IP addresses after that.

You are supposed to go into the registry and make the change there
before going into Imail Admin and making that change.
