The short answer is... out of the box Imail does not support the last question "Would the
second server know when user gets mail? "
I think you may want to look at a clustering solution. Ipswitch does not support this, which isn't to say that clustering isn't an option.
I've looked at a similar solution -- minus the two redundant circuits and I was told that it was possible by the folks at Optrics (http://www.optrics.com/) my rep. at at Gateway was willing to investigate the feasibility of clustering hardware for an Imail solution. Please contact me off list, and I will send you their email addresses.
The official Ipswitch answer to what you want to do is called peering. This would not provide full redundancy, but would segment your users such that a failure of any one server would only effect the portion of those users housed on that server.
You can search the archives for clustering and peering.
