In Webmail- it's tedious.
Create your new folder and subfolders.
Go to each of the old folders, mark all messages and move them to the 
new subfolders.  Depending on the number of messages and how many you 
display at a time, you may have to do this multiple times.
Remove the old folders.

Much easier to do this on the server.  First create your new folder.  
Then, using Explorer create a directory with the same name (Animals). 
Move each 'folder'.* (Dogs.*, etc) into your new directory.
