We have the Anti spam set up to look at headers and move spam to a users "Spam" folder. All fine and working for ages.

BUT... We have a problem in that one of the clients keeps having email sent from within his own domain caught as spam. So we added the domain name to the white list. But it stills keeps catching odd emails and the client is getting cross with us!!!

Any ideas on why it ignores the white list?

That's because you are running IMail v8.05, which doesn't use true whitelisting (the 'whitelisting' in IMail v8.05 will only run the whitelist on half of the spam tests). You need v8.1 (or, of course, an addon) to use true whitelisting.
