Yep...mail server, or sending machine if the local user has an SMTP server or does MX lookups to deliver directly to the destination mail server. From address is anything the user wants it to be.
Actually, "sender" should mean the return address ("MAIL FROM" in the SMTP envelope, where bounce messages go). That may be completely different than the domain of the sending mailserver, its reverse DNS entry, etc. It is typically the same as the "From:" address, except with mail from mailing lists, where it often points to an unsubscribe address.
