Been getting a lot of spam getting through lately so I did a bit of digging
and found that the Search URL's for SpamCop (bl.spamcop.net) and Spamhaus
(sbl.spamhaus.org) do not resolve to "A" records anymore. Are others seeing
this? What are some of you guys using as lookup DNSBL's instead of them?

That's normal -- the zones for many spam databases do not have A records. In this case, spamhaus.org and spamcop.net do not have A records, but do have NS records. Since they have NS records, though, the spam database lookups work.

We keep the list of spam databases at http://www.declude.com/junkmail/support/ip4r.htm and list at the bottom of the page when spam databases die.
