Because one of the RFCs suggests reserving port 587 for SMTP AUTH traffic. It seems to be becoming the standard alternate port when 25 isn't available.
I don't think it can be done with Imail, but to keep port 587 being nothing but another spam target, it should be set up to accept only SMTP AUTH, even for local Imail domains. No AUTH, no msg accepted.
