Looks like that will work. 
What is it called when a receiving mail server verifies the sender by
checking the MAIL FROM account, are there issues with submailboxes? Should
the NONE alias be setup?

Why not make a real address for it and use submailboxes so you could have
the real email address bouncer then send mails from
bouncer+<Unique-ID>-at-pac...
that way the from is real 'bouncer' and have the submailboxes set to deliver
to the inbox. Our server uses + for the submailbox character - I believe the
default is -, either way should work.
