What I do not understand is that I have our IMail server set to do a reverse lookup. If there are no from, to, or subject fields, what is the IMail server using for a reverse lookup?

Reverse DNS works by turning an IP address into a hostname. Every E-mail will always have an IP address associated with it (it is impossible to send an E-mail without a source IP).
